Vegan Italian Dressing

If you don’t want to buy Italian dressing from the store anymore, you can easily make yourself an oil-free, soy-free, and dairy-free batch at home. Here is a simple recipe you can follow to make a nice creamy Italian dressing you can use for your salads

Ingredients
  

  • 3/4 cup 112 grams raw, unsalted cashews
  • 1/2 cup + 2 tablespoons water
  • 3 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon maple syrup or agave
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dry yellow mustard powder
  • 1/4 teaspoon paprika
  • 1 tbsp dried Italian seasoning blend without salt or red pepper
  • scant 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Soak cashews in water for 12 hours
  • After 12 hours of soaking, use a blender or a food processor to blend your cashews until nice and smooth
  • Add the rest of the ingredients to your blender or food processor
  • Add ¼ teaspoon of Italian seasoning
  • Once thoroughly mixed, place in the fridge for an hour to chill

Notes

Use wine or lemon to add more tart
Add water to thin the consistency when it gets too thick
