Fluffy Shortening Biscuits

The fluffiness of these biscuits comes from the addition of an egg to the dough.

Ingredients
  

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 large egg at room temperature
  • 2/3 cup milk

Instructions
 

  • Preheat the oven to 400°F.
  • Whisk together the flour, baking powder, sugar and salt.
  • Cut in shortening until the mixture resembles coarse crumbs.
  • In a separate bowl, mix the egg and milk.
  • Add the mixture to the dry ingredients. Stir until just moistened.
  • Flour the working surface well.
  • Tip the dough out and knead it gently 8-10 times.
  • Roll the dough to ½ inch thickness.
  • Cut biscuits out with a 2-1/2 inch biscuit cutter.
  • Place the biscuits on a baking sheet lined with baking parchment.
  • Bake until golden brown, 10-12 minutes.
