Creamy, Herby Salad Dressing

This rich salad dressing highlights potato, cucumber and beet salads, as well as pasta salad and steamed fresh vegetables, served cold. Very soft leaves like baby spinach won’t stand up to it, so keep sturdy lettuces in mind instead.
Servings 1 cup

Ingredients
  

  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 2 tablespoons white wine vinegar or fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 3 green shallots thinly sliced

Instructions
 

  • Place all the ingredients in a bowl and whisk until combined. Taste a teaspoonful and season with salt and/or freshly ground black pepper to taste.

Notes

Swap the parsley for other herbs such as dill, cilantro, or mint if you like.
